Elderberry (Sambucus nigra) has a well-deserved reputation as a great cold and flu remedy, thanks to its powerful antiviral properties. (Bonus points that elderberry syrup tastes a heckuva lot better than your average cold medicine!)
Today, we’re going beyond the usual syrup recipe and making an elderberry oxymel. The term oxymel is derived from the Latin oxymeli, meaning “acid and honey.” As its name suggests, it’s simply a blend of apple cider vinegar and honey, infused with herbs.

Ingredients
- dried elderberries
- fresh or dried elderflowers
- raw, local honey
- raw apple cider vinegar with the “mother"
Instructions
- Fill jar to approx. the halfway point with dried elderberries and elderflowers
- Fill jar to the 1/3 point with honey, covering elderberries and elderflowers
- Gradually add apple cider vinegar a little at a time, stirring as you go, until jar is filled
- Label and cover jar with a plastic lid or parchment lined metal lid
- Shake jar daily for 1 week, before placing it in a cabinet and allowing it to sit for 4 weeks
