When gathering your pine needles, focus on the young, pale green tips of the branch, as they are the sweetest tasting (slightly citrusy, actually) and the highest in vitamin C.

- 1/2 c chopped pine needles
- 3/4 c water
- 1/2 c raw honey
- Combine pine needles and water in small pot; cover and bring to a simmer
- Remove from heat and let sit for 30 minutes
- Add honey and refrigerate; use within 30 days
